Smothered pork – Easy, budget-friendly

Smothered Pork! Anyone hungry? This recipe sounds so yummy but yet so complicated! Yet, if you follow along, you will see it is easy breezy with this simplified slow cooker recipe. Best of all, it is budget-friendly and can be quickly added to my Budget-friendly Two-week Meal Planning for under $75! 

As promised in my last post, I wanted to quickly churn out this recipe! You will now be ready for your Budget-Friendly Two-Week Meal Planning listed above.

This is a quick, easy recipe that can be made in under 10 minutes (not including cooking time). Keep reading and your dinner tonight will be fast, simple and make your family smile. Any recipe with cream of mushroom soup in it, has to be good.

Smothered Pork: What you will need:

1 package Market Pantry Center-cut Pork (You can use other varieties as well. I’ve used bone-in or bone-out)

1 Can Cream of Mushroom Soup  (Save $1.25 on any FIVE (5) Campbell’s® Condensed Soups)

3/4 cup chicken broth

Salt and Pepper

1/2 Onion

Rice (Choose your favorite. I have used a brown rice and quinoa blend or plain white rice, so pick your passion)

Optional: Chopped mushrooms

Directions:

  1.  Slice up 1/2 an onion
  2.  Place onion and chicken broth in Slow cooker
  3. Stir in cream of mushroom soup (if you are adding mushrooms put them in as well)

4. Season each side of the pork with salt and pepper

5. Place meat on top of the liquid mixture and cover

6. Cook on high heat for around four hours

Note: Most of us know our slow cookers so this is more of an estimated time but the pork should be super easy to cut with a fork when it is done. (Please be sure to cook your pork to an internal temperature of 165 degrees fahrenheit)

While the pork is finishing up, cook your rice. I have used both microwave rice packets or white instant rice on the stove. Smothered pork is also good served with a dinner roll or mashed potatoes.
